My love for the Instant Pot runs deep. Real deep. I first fell in love with this multi cooker when I had dinner at my friends house and she made the most delicious, flavorful, amazing, melt-in-your-mouth short ribs with buttered noodles. It was glorious! And then when she told me she put the ribs in the Instant Pot frozen and it took less than hour to cook and it turned out as delicious as it did, I WAS SOLD!
I immediately went on Amazon and purchased the 6 quart Instant Pot. When it arrived in my house two days later, my life was forever changed. (I’m so dramatic.)
Since then, I’ve made a bunch of recipes using the Instant Pot such as spaghetti (noodles and all), short ribs, baby back ribs, pulled pork, beef stew and chicken noodle soup. It really is an easy and efficient way to cook and is a savior for busy moms everywhere.
I gotta admit though, at first I was intimidated to use it because it’s a completely different way to cook. Not to mention the whole ‘releasing the pressure’ thing! Before I got comfortable with using my Instant Pot, I did some research online and found a few quick and easy recipes to try that I want to share with you! These are my definitely my go-to’s when I want to make something I know will turn out delicious and the whole family will enjoy.
Baby Back Ribs by The Real Food Dieticians
After having these ribs, I will never prepare and cook ribs any other way. The process is so much quicker, simpler and there is no mess. The trick is to put the ribs in the Instant Pot in a teepee formation to let the steam circulate throughout, set it and let it do its magic. The ribs are so juicy and literally falls of the bone. The crust you get after sticking it in the broiler for a few minutes is the icing on the cake!
Korean Short Ribs by Nom Nom Paleo
My favorite Nom Nom Paleo recipe has got to be her Korean Short Ribs! Instead of brown sugar, she uses a pear to bring in the sweetness and its a total game changer. Do not skip that step! This is also Whole30 approved so you can feel good about eating it. I like to pair it with mashed potatoes and green beans. A perfect Sunday night dinner.
Kalua Pig by Nom Nom Paleo
This is hands down the easiest thing you can make in the Instant Pot. You literally season the meat, stick it in the Instant Pot and shred it with a fork once its done. Put it in tacos, wrap it in lettuce, put it between bread or just eat it as is. It’s so flavorful and delicious and ridiculously easy, you can’t even call it cooking!
Chicken Wings by Flashes of Delight (yep, me!)
I made these chicken wings a few months back and since then, have probably made it a dozen times more because its so simple and easy and a great weeknight dinner. Just cut up some carrots and celery, grab some ranch and you have a great appetizer for Super Bowl Sunday! The best part is the kids love it too! I also love the fact that the sauce I use not only comes right out of a bottle but its Whole30 approved! Score!
Instant Pot Spaghetti by The Salty Marshmallow
The first time I made this I was in total amazement at how quickly everything cooked in one pot, including the noodles! Forget using multiple pots. You can dump everything in the Instant Pot and in less than 30 minutes, have a spaghetti dinner on the table. You have just enough time to make a side salad, cut up some bread, set the table and dinner is served!
