When I cook, the first thing I consider when trying a new recipe is how many ingredients I need and how long its going to take me. The fewer the ingredients and the quicker it takes to get dinner on the table, the better!
If you’re like me, I have the perfect weeknight (or weekend) recipe for you. It’s quick, easy, healthy and delicious and takes no time at all. And it only has 3 ingredients (olive oil and salt & pepper don’t count!).
Pork chops with roasted brussels sprouts and sweet potatoes
(Serves 3)
Ingredients:
1-package of quick fry pork chops (usually has 5 thin slices)
1 pound of brussels sprouts
1 big sweet potato
Olive oil to coat the pan for the pork chops and to drizzle on the brussels sprouts and sweet potatoes
salt and pepper
Directions:
Pre-heat the oven to 375 degrees
Wash the brussels sprouts and cut in half
Peel the sweet potato and cut in chunks (try to get it the same size as the brussels sprouts so it cooks evenly)
Put the veggies in a deep sheet pan or baking dish
Drizzle olive oil and stir it around so that the veggies are well coated
Season with salt and pepper
Bake for 20 minutes, then take it out, stir the veggies around and put it back in for another 10 minutes
When the veggies are almost done, heat up some olive oil on a skillet
Season the pork chops with salt and pepper on each side
Fry the pork chops about 2 minutes each side or until brown. They cook fast so keep an eye on them
Serve the pork chops and veggies together and enjoy!
We had ours with a glass of Chardonnay and it was the perfect weeknight dinner that tasted like I slaved in the kitchen for hours when in fact it only took 30 minutes!
