Growing up in an asian household, it was very rare that I would have oatmeal, cereal, or smoothies for breakfast. It was more like eggs, bacon (or some form of meat) and rice or Pandesal, a delicious Filipino sweet bread toasted and spread with lots of butter and jam. I was able to get away with it as a child but as an adult, I quickly learned that a healthy balance is key. While I still love and enjoy the occasional hearty breakfast, most days I opt for a nutritious breakfast I can have on-the-go that will give me the energy I need to keep up with the kids, accomplish my tasks while being in a great mental and physical state .
Smoothies have been one of those things that grew on me. At first I just couldn’t get used to drinking my breakfast instead of eating it but after testing out a few recipes and playing around with my Vitamix, I came up with this strawberry banana concoction that got me hooked and is sure to make anyone convert!

Try this strawberry banana mint smoothie for breakfast but also as a pre or post-workout snack. Just substitute the collagen powder with your favorite protein powder and you’re set. I hope you give it a try!
Strawberry Banana Mint Smoothie
(makes 2 servings)
1 Banana
2 Cups of frozen strawberries
2 Mint leaves (Mint is a calming and soothing herb that helps to ease digestion)
3 Cups of Unsweetened Almond Milk (I like the Califia Farms brand because of its creamy texture without any artificial extras)
1 Generous handful of pre-washed organic baby spinach
1 Scoop of collagen (My favorite is Vital Proteins Collagen Peptides for glowing skin and stronger hair and nails)
1 Tbsp of chia seeds
