Introducing the easiest, yummiest, guilt-free breakfast you’ll have.
My hubby, Rowell actually introduced me to this delicious breakfast of sweet potato hash with fried egg. When I was on Whole30 about a month ago, this breakfast was one of my favorites because not only was it compliant but it always filled me up, was super simple to make and only requires two ingredients. You can’t go wrong with that. Some of you know how much I love recipes that require minimal ingredients yet pack a punch with flavor.
When I’m trying to cut out carbs, sweet potatoes are a good alternative. They pack a lot of vitamins and antioxidants to fight off illnesses and still makes me feel satisfied. They are rich in vitamin C for your immune system, potassium to help control blood pressure and calcium for your bones.
I requested this for breakfast over the weekend and Rowell happily obliged and I was a happy wife. Happy wife, happy life, am I right?
If you’re on Paleo or Whole30, substitute the olive oil for coconut oil but other than that, this recipe is good as is.
What you’ll need for 2 servings:
6 small sweet potatoes (or 1 large)
4 eggs
2 tbsp of olive oil
salt and pepper to taste
Instructions:
Peel the sweet potatoes and shred using a cheese grater
Heat up a skillet and 1 tbsp of olive oil
When the skillet is hot, add the shredded sweet potato
Leave it on to get a pancake like consistency
Burnt and crispy parts are the best parts
Remove the sweet potatoes from the skillet and transfer to two separate plates
Add 1 tbsp of olive oil back to the pan
Fry your eggs two at a time so as not to crowd the pan
Lay the fried egg on top of the sweet potatoes
Voila! It’s that simple. You can’t go wrong with this recipe. It’s healthy, delicious and so easy!
