I love it when the temps drop a little in California because everyone gets so excited, even if it means just dropping below 75 degrees! And now that the holidays are right around the corner, I can’t resist the temptation to hibernate at home, do some baking and cozy up on the couch.
One of the things I love to bake this time of year and is a family favorite is banana bread. Mainly because its super easy to make and the ingredients are staples in my home. I came across the best banana bread recipe on the internet by literally googling “best banana bread recipe” and this one from www.Food.com was the first on the list.
This recipe will give you the most moist (ugh, anyone else hate that word?), and tasty banana bread ever! You can add walnuts if you like. Sometimes I add chocolate chips because then it becomes more of a dessert treat which we have to have in our household. My son constantly asks me to make this for him.
I used my red KitchenAid Stand Mixer that Rowell got me for Mother’s Day a few years back. This takes all the effort and time from having to mix and knead the ingredients and it does it in no time at all. Its an investment for sure but I’m so glad we have it because its so durable and will last us forever, hopefully! I plan on buying the attachments to grind meat and make our own pasta as well. This would make a great splurge gift for someone special who loves to bake and cook and you will reap the benefits by eating all the goodies. It’s the gift that keeps on giving!
Here’s what you’ll need to make 1 loaf.
Ingredients:
1⁄2 cup butter
1 cup sugar
2 eggs, beaten
4 bananas, finely crushed
1 1⁄2 cups flour
1 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 teaspoon vanilla
Directions:
Cream together butter and sugar.
Add eggs and crushed bananas.
Combine well.
Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
Pour into greased and floured loaf pan.
Bake at 350 degrees for 60 minutes.
Keeps well, refrigerated.
That’s it! Super easy and delicious! Give this a shot! I am not a baker what so ever. I am much more comfortable cooking rather than baking but If I can do it, anyone can!
Oh and make sure to have it for breakfast with coffee….YUM!
