Happy Monday!
This weekend was a productive one for me! Got a little bit of everything that I needed to get done, done! It’s the greatest feeling! I started Saturday with a Soul Cycle class followed by lunch with a couple of girlfriends. Then purged my closet and drawers and implemented the Konmari Method (anyone else obsessed with Marie Kondo and her show on Netflix?), went grocery shopping and meal prepped and caught up on my show, The Marvelous Mrs. Maisel on Amazon! I love weekends like these!
One of the meals that I made to eat throughout the week is this Turkey, Kale & Wild Rice Soup. It’s so easy to make, super healthy and requires very few ingredients.
It’s supposed to rain 4 days straight this week and this soup is the perfect thing for a cold, rainy winter night.
Ingredients:
3 cloves of garlic minced
2 shallots diced
2 cups of cubed carrots
1 pound of organic ground turkey
3 cups of cooked wild rice
2 pints of organic low sodium chicken broth
3 generous handfuls of kale removed from the stalk (I used the bagged kale from Trader Joes)
Salt & Pepper
1 tbsp of avocado oil
Instructions:
Cook wild rice on the stove top or rice cooker. (You can even use Uncle Ben’s microwaveable wild rice if you’re strapped for time)
Heat avocado oil in a stock pot to medium heat
Saute the garlic and shallots until it looks glossy
Add the ground turkey and cook until browned
Add the carrots and let cook for 1 minute covered
Season with salt and pepper
Add the chicken broth, mix everything together, cover the pot and let it come to a boil
Add wild rice and stir
Reduce the heat back to medium
Add the kale and make sure its all submerged in the stock
Cover and reduce heat to a low simmer for 1-2 more minutes or until the kale is cooked to your liking
Serve in a big soup bowl and enjoy!
This would go great with a warm french baguette on a cold winter night.
